Question: I have severe joint stiffness. Can't bend at knees unless I move very slowly. It' like my hamstrings are too tight?

From your symptoms it seems that both of your knee joints have undergone osteoarthritic changes. These are basically age related degenerative changes in the weight bearing joints like knee and is characterized by joint pain and stiffness.
The treatment options include pain killers, hot fomentation, lubricating agents like glucosamine sulfate, chondroitin , dycerin, etc and some life style modifications and physiotherapy.
I suggest you to consult an orthopaedician nearby for a detailed examination.

Follow up: Dr. Dr. Praveen Tayal (10 minutes later)
This started rather suddenly a couple of months ago. Then I took Prednisone for a short time which solved the problem. I felt great. Of course I'm told I can't continue to take it. I was wondering if Lyme Desease might cause this or something like that?

Improvement on taking Prednisone suggests a joint inflammation. Most likely cause is osteoarthritis. Lyme's disease is a less likely cause. However direct examination and few investigations are needed to confirm the cause.
