Question: I have Type II diabetes with kidney disease (only have 15%.) I need a low sodium, low carb., low potassium diet. I am having trouble determining how much of each I can tolerate per meal. What can I eat?

I have carefully read your query and understand your concern.

Patients with diabetic nephropathy are often advised to consume low calorie and low protein diet.

I advice you to keep track of these.

Total sodium intake should be less than 2200mg/day.
Total calorie intake should be 2200mg per day
Total protein intake should be 22 mg per day.

Take low protein food like fish or egg white.

Avoid high potassium foods like canned foods processed meat,spinach,tomato banana and peach.

Avoid high uric acid foods like beans and animal giblets.

Foods with high amount of energy and low protein like potato and sweet potato can be taken.

Salted vegetables and excess fluids have to be restricted.

Breakfast should include 2 slices of toast with 8 oz of 1% of milk.

Lunch should include small salad of lettuce,cucumber and 1/2 cup carrots with 1/2 cup green pepper with low fat ranch salad dressing.

Dinner should include 1/2 cup onions with 1/2 cup cooked onions with 1 tsp canola oil with one large baked 9 oz sweet potato with 2tbsp sour cream.

Have 2 1/2 cups of vegetables and 2 cups of fruits daily.

Low lipid consumption.Prefer olive oil and peanut oil.

Thank you. I have a better understanding of meal planning. I have been eating oatmeal for breakfast often. Is that a good food for me? How about an "egg beaters" omlet with vegetables? Eating in restaurants will now be a challenge, but I am anxious to avoid dialysis. What are lipids?

Yes oatmeal is a definitive good meal for diabetic.Taking it for breakfast has added values when taken at other times of the day.

I advice you to have omlet with pure egg white rather than with whole egg which will be unhealthy if the yellow is added.

You need to have scheduled sessions of dialysis which is a must.

lipids are fat containing substances.Intake of excess fat in diabetic individuals can predispose you to heart attack risk.
