The electrolytes need to be checked occaisionally, but if the potassium isn't elevated then it isn't a problem. All vegetable material has about the same amount of potassium. It's just how much material you take in is how much potassium. Dried plant material (herbs) has the highest potassium per weight; over 1 gram per 100 grams for dried cumin, cinnamon, or celery seed. Spinach, orange juice, bananas are a lot of potassium simply because we eat a lot of it at a time. Iceberg lettuce is largely fiber and water so it's content of anything (potassium, vitamins) is quite a bit lower relative to its weight.
Mainly check if you need a potassium restriction.
