There is absolutely no connection between ulcerative colitis and Gilbert's.
While ulcerative colitis is an autoimmune disorder affecting primarily colon and rectum only,Gilbert’s syndrome is caused by decreased hepatic levels of the enzyme glucuronosyltransferase. As this enzyme is responsible for the glucuronidation (conjugation) of bilirubin in the liver, reduced activity of this enzyme leads to an accumulation of unconjugated bilirubin in the circulation.
