Hi,

Noted your history about feeling food stuck in throat and need to belch to feel good, tired and shortness of breath occasionally.
All these things are suggestive of the following:
An actual obstructing factors in throat.
Inflamed throat.
GERD with acid contents causing such a feeling in throat.
Psychological which called a globus hystericus in past.
I would advise you the following:
Already the blood investigations looks to be done., which actually may not show any positive findings.
Hence you need an actual Upper GI Endoscopy including a detailed study of throat.
May be a Barium swallow and so on as required.
If these investigations are normal then this is most probably a psychological problem; avoidance of stress and anxiety with or without medications will help you a lot when done under guidance of your Doctor or a Specialist.
If any particular problem is found during investigation then this can be treated specifically.

I hope this answer helps you. Let me know if I can assist you further.
