What Causes Autoimmune Or Celiac Disease Despite Healthy Diet Habit?

Curious, Growing up I never had a problem eating gluten heavy foods... In fact all I ate was pasta, pizza, pancakes... any bread based carb. After a growing up a bit i bagan eating other food and healthier over all. I began eating no bread, pasta... any carb based food really. No about a year.. year 1/2 I got some blood work done and while not confirmed they think i have an auto-immune disease... they think celiacs. Im just curios if this is posible considering my history... it would also possibly help explain variety of other unsolved problems.

Thanks for your query.
Noted the history and understood your concerns.
There was no problem with gluten while growing up, hence developing gluten intolerance at later ages is rare but can occur. You have already stopped foods like breast and anything that contains carbohydrates.
The incidental finding of anything on the blood or stool tests needs to be correlated to the clinical presentation, evaluation and examination.
Please post for any other problems that your have not mentioned in details>
