What Causes Abdominal Bloating?

With much trial and error over the past year I have determined I am sensitive to dairy, corn, gluten, rice, quinoa. The symptoms are pain in my stomache significant bloating (several inches) and overall inflammation that prevents me from closing into a fist. What is the mechanism of these changes?
