Hi
Welcome to Health care magic

Irritation in the throat is probably because of injury caused to the throat by the pork chop bone. This will heal with time hence no need to worry. However examination by laryngoscopy is required to rule out presence of the bone in the throat and its removal if it is present.
Do consult your ENT doctor for examination and treatment.
