I am a 64 year old woman who became a Vegan about 3 years ago. I was diagnosed with MCI about 3 years ago (long line of early Alzheimers in my family). Currently I am having some stomach issues (pain & gas). As a Vegan I eat a lot of soy and have heard soy can cause stomach issues. My question is what in the heck can I eat to get protein. I do eat beans, but to get enough protein from beans would surely cause be great distress too. I try to get about 60 grams of protein daily. Even adding quinoa, I would still have to eat a lot of beans. Any suggestions
