I Am 54 Year Old Female, Veterinarian, Vegetarian, Chronic Eating

I am 54 year old female, veterinarian, vegetarian, chronic eating disorder (bulemia/anorexia) since 15 years old, weight stable at 104#. Last two years suffering from moderate to severe depression, colitis, fatigue, brain fog, muscle aches, light headiness, chest pain, periods of food panic attacks if I have not had balanced meals, increased injury with exercise, bloated GI (almost stasis-like feeling).
Last year had a severe bout of depression. My therapist and physician started me on Zoloft, unfortunately, with in a week I developed severe GI reaction to Prozac. I stopped Prozac after two weeks but the GI signs continued. (After 6 weeks of diarrhea and 10 pound weight loss, parasite checks and scoping diagnosis of colitis of unknown origin was made. Celiac test negative . I stopped gluten on my own and the GI signs improved dramatically. Each time I have tried either adding gluten I develop severe diarrhea, also each time I have tried any SSRI drugs I developed severe diarrhea. I assume I have stress colitis and SSRI and gluten just aggravates it.
Last three months all clinical signs have worsen.
Current Medications: progesterone/ estrogen no change for 5 years.
Any insight would be appreciated.
