How To Increase Weight Of A Kid?

my 2.5 yo daughter (preemie, born at 31 weeks) is a picky eater. she will only eat oatmeal (breakfast), rice, mac n cheese (lunch/dinner), and certain fruits (strawberries, bananas, pineapples). I would like to introduce more healthy foods and help her gain weight. Any suggestions for what i can do and what specific foods will help me increase her weight?
