What Could Cause Symptoms Of IBS Attack After Mid Day Meal?

Hi doctor. I am 65 yo white male dealing with at first glance what seems to be IBS, the strange thing is I spent a month in Costa Rica and did not have any issues. I have modified diet and have begun high dose probiotics. I seem to do ok until the mid day meal which triggers an attack. After that I am ok. Any suggestions?
