You can't possibly get approx. 1900 calories only through vegetables, fruits and eggwhites in your diet. I presume the vegetables you eat are either raw or cooked in less oil since you are so particular about gaining weight. Are you having cereals, pulses or beans and dairy also? Make sure you have a well-balanced diet as eliminating certain food groups will only lead to nutrient deficiencies.

I can understand your concern for weight and it is common for adolescents to get obsessed with a slim look during the most critical period of growth. In pursuit of a slim look, do not starve or try crash diets which will play havoc with your future health. Merely subsisting on a fruit and vegetable diet with eggwhites will lead to nutrient deficiencies which can affect your health adversely in the long run. Depriving your body of the nutrients it needs for proper growth will also affect your height and appearance. Due to reduced energy intake at such a stage of life, your metabolism will slow down which will make your body conserve every calorie that you eat resulting in weight gain later in life. Therefore, focus on staying healthy and fit more than gaining weight as you are still in a growing stage. Do not worry about putting on weight instead eat healthy and stay active to burn excess calories. Crash diets only lead to malnutrition and poor health. Include other foods as well such as whole grain cereals, pulses/legumes, low fat dairy products alongwith fruits, vegetables and eggwhites as these alone cannot meet your body's need for complete nourishment. Milk and milk products such as curd and cheese provide calcium to build strong bones and whole grain cereals and pulses provide several vitamins and minerals such as B complex vitamins, vitamin E, zinc, selenium, iron etc.

Eating a well-balanced diet and staying active will help you in gaining health not weight.
