Hello and welcome to HCM,
Green leafy vegetables are rich in iron so consumption of green leafy vegetables will lead to increase in iron content and improve the hemoglobin but will not affect the thickness of blood.
Warfarin is stopped before surgery to avoid excessive bleeding during surgery, however, this is only temporary.
The drug is started once surgery is over.
Consumption of green leafy vegetables and fruits is good as it improves hemoglobin levels.

Thanks and take care
