Brief Answer:
Glucose

Detailed Answer:
Normal glucose values in humans in the fasting state are in the range of 65 to 99 mg/dl. Fasting refers to at least 8 hours of no caloric intake after overnight sleep, when one wakes up. Of course, this applies to the majority of the world's population who has the conventional sleep-wake cycle.
Those with night shifts, fasting state would be whenever they awake from their scheduled sleeping time.

When the fasting glucose is between 100 to 125 mg/dl, it is labelled as IFG (Impaired Fasting Glucose). It is also called Pre diabetes.

When the fasting value equals or exceeds 126 mg/dl, it is compatible with a diagnosis of Diabetes.

This range also applies to the 'before meals' state. So before lunch and before dinner too, the body regulates it's glucose levels to keep it in the range of 65 to 99 mg/dl.

When one eats, the peak blood glucose levels 1 to 2 hours after a meal can go upto 140 mg/dl. This is also accepted as normal.
Anything between 140 to 199 mg/dl is considered Impaired Glucose Tolerance (IGT). It is also called Pre diabetes.
Pre diabetes is a risk factor for the development of diabetes.

When the post meal glucose value equals or exceeds 200 mg/dl, it is tantamount to diabetes.

The post meal test is ideally to be done after consuming 75 grams of glucose powder in water. Meals are variable form person to person and therefore it is hard to standardize the test based upon a 'meal'.
