For the past two weeks, I have been having issues with swallowing and I am not sure what the cause is. It feels dry in my throat so when I swallow, it feels like saliva is stuck. When I drink water, it feels ok. When I eat, sometimes it feels stuck and sometimes it is fine. My throat also sometimes feel like there is a coat of mucus inside, and I have to clear my throat often. My voice is also a little more hoarse than normal.

I usually have seasonal allergies and postnasal drip sometimes.

Should I be worried this is some sort of thyroid or esophageal cancer?

No, you should not worry about cancer since this is last thing to think of.
These symptoms are common and usually suggest GERD, gastritis, esophageal spasms or respiratory issues such as allergies and sinusitis. Also, previous pneumonia may manifest on this way as well.
I suggest to have diet for GERD, avoid smoking, alcohol, coffee, fried food.
Try to lay with elevated upper body, avoid cold and dry environment.
If there is no improvement in next few weeks, then you should consider gastroscopy and lung ventilatory function.

Thank you. I also started feeling intermittent aching pain under my right breast area, it would hurt more while breathing, then I take some deep breaths and it goes away in a few minutes. My O2 is 95% and up. Do I need to be concerned?

Well, it suggests pinched intercostal muscle or nerve so i would not be concerned about this at this point. But if pain becomes constant you should do xrays or ultrasound
