Suggest An Oil That Wont Destroy Nutritional Values Of Fish If Deep Fried

ok my husband and i both have highpertension and we really only like fried foods and it is my understanding that fish has lots of nutritional values so is there any type of oil i can deep fry it in that wont destroy those nutritional values and all i ever bread it with is cornmeal
i am female 43 yrs old my husband is 54 i am 5'4-107lbs and he is 5'8 about 170 lbs he has inner ear problems and now high bloodpressure and i have high bloodpressure tendonitis and low b12

Actually, it is no surprise that frying fish provides fewer nutrients than baking or cooking fish. After all, fried foods are typically more processed, containing more destructive fats than other types of prepared foods. When you fry fish in a skillet, you expose the omega-3 fatty acids to high temperatures. As the omega-3 gets overheated, the fatty acids begin to break down, meaning you may end up with significantly less omega-3 in your meal. So its better to bake or grill fish.
