Question: Made chili cooked short boil. Left sit out unrefrigerated for 3hrs. Can it be eaten without danger of sickness?

Hello,

you're talking about seafood, right? If not please, clarify...

Seafood should not be left for more than a couple of hours because it spoils really fast. If the temperature is high (30 degrees of Celsius or about 90 Fahrenheit) then it may spoil even faster (within one hour). So I can't guaranty the safety of eating unrefridgerated food.

If it smells strangely (like ammonia usually) then it's most likely spoiled. The opposite is not always true though, that is lack of bad smell does not mean you're not going to get sick if you eat it.
