What Is A Suitable Vegetarian Diet For A Diabetic After Undergoing Cholecystectomy?

Hi, close relative of mine underwent gall bladder stone removal in November 2012. She also suffers from diabetes. Could you please help us with a diet recommendation that would suit her health? She is a vegetarian (she consumes dairy products but not eggs). Many thanks.
