How To Treat Foul Stools Caused By Diarrhea?

Went gluten free over two years ago due chronic bouts of diarrehea after a stomach virus I had gotten 8 months earlier and had no relieve other treatments from my doctors. Blood work slightly over levels for celiac but no upper GI damage found. I was also told that I had an excess amount of fat in my stool. GI doc thought the g-free diet would clear this up since no other major symptoms presented themselves for more serious disorders. I am still having the same foul-smelling, floating stool years later. Started digestive enzymes with some results, but do I need to keep taking them forever or should I consider that something else may still be wrong?
