Hi..
Welcome to HEALTHCARE MAGIC..

I have gone through your query and can understand your concern.

As per your complain and presentation of symptoms it points towards a condition known as Gastro-esophageal Reflux Disease which is commonly known as Acid Reflux.

In this condition there is reflux of acid from stomach to throat and mouth and irritation caused by it can cause choking feeling, difficulty in swallowing, burning pain in chest, post nasal drip or mucous at the back of throat and many individuals find more discomfort during lying down as the acid refluxes from while lying down due to posture.

As prilosec [omeprazole] helped you a bit there is further an added probablity of acid reflux.

Yo should consult a Gastroenterologist and get evaluated and if required he can get an endoscopy done.
For acid reflux he can advise you to continue taking Prilosec and can even increase the dose.
Antacids like Milk of magnesia can be advised.
Avoiding acidic and spicy foods can help..
Drink plenty of water preferably cool can help.
Take small meals and eat your dinner atleast 2 hours before sleeping.
Take short walks after meals.
While sleeping you should keep your head slightly raised as compared to legs.

Hope this information helps..

Thanks and regards..
