What Causes Botulism?

Question: I processed a receipe for oven roasted tomatoes. the tomatoes were roasted @ 275 for 3.5 hours and then packed with olive oil. They were supposed to be refrigerated, but we did not do that. the one I opened and tested (ate a small amount) had bubbled up through the oil, but I thought that might be because it was in my car and had moved around a bit.
I ate this 2 hours ago. I am in overall excellent physical health. My friend who is a nurse recommended we look this up and we are both quite concerned now about botulism. where do I go from here. You can call me @ 0000

You are concerned about eating oven roasted tomatoes that were not properly stored. You are worried it could be botulism in the sample you ate. The likelihood is remote. Botulism is caused by the spores of the botulism bacteria to start growing in a micro-oxygenated environment like inside a can. In your case these were not sealed cans. The other reason is the high temperature and the long time in the oven would have killed any botulism spores. Therefore for these tow reasons you do not have to worry about botulism.
