I am on a Mediterranean diet with lots of fresh fruits and veggies along with fish and no glutens. I am wondering if a kidneystone could be any way responsible for this event? It happened during sleep and the next day a stone presented itself in my ureter.

Ureter irritation, may have been interpreted by your body differently. The sympathetic system must have been activated resulting in increased activity of both the colon and the ureter. This could have cause hyper-stimulation in both ureter and colon (whole of Gut)
In case of ureter, the stone has come out, while with colon, watery mucus secretions has come out.
The stone could have been. You could have felt some pain during this time, as the stone moved through the ureter.
If it recurs, do get an ultrasound done to evaluate for any more stones in urinary tract or lesions in colon.
