Brief Answer:
likely to be effect of osteoporosis / Loss of bone matrix.

Detailed Answer:
Hi , I am Dr Gopal Goel ,Orthopedic Surgeon.
Overall loss of muscle mass with several food allergies( on vegan diet) with sleep apnea-- My diagnosis will be towards osteoporosis as the main cause. I suggest you get bone densitometry, Se Ca and S Vitamin D3 levels tested.
Start regular calcium supplements( choose one which does not cause any allergy), Vitamin D Supplementation, Exposure to morning sun, gentle active exercises like brisk walk( only as much as you can do.). Other medications will depend on your reports.
I hope this answer helps you. Thanx
