I read carefully your question and I understand your concern.

I see that what you are doing so far seems the right things.
There is not a cure to treat the tendency of your skin to be more sensitive, but there are ways to protect it, so it won't develop sunburn or even lower the chances of having skin cancer in the future.

Here are some advises:
-- If you are using medications for chronic problems, check if any of those gives sun sensitivity. For example, Doxycycline and the meds in that drug family give that effect.
-- Walk in the shades when possible, wear hat, avoid sun exposure in the peak hours (between 10:00 am and 2:00 pm), use sunglasses.
-- Sunscreen broad-spectrum water-resistant, with protection against UVA and UVBwith SPF >30, and if you find =100 that would be ideal. There are also some specific advises on how to apply sunscreen, because if applied in the wrong way it may burn your skin, instead of protecting it- use 1 ounce of sunscreen (size of palm) and thoroughly rub in reapply every 2 hours or after swimming or sweating.
