I can understand your concerns about your mother but first let me begin that the lab results you sent shows normal values except for the D- dimer which is high and thats because of the covid infection, and the potassium level is slightly elevated.
That elevation does not indicate anything for real, but we should repeat the potassium level after few days to see if this elevation persists or not.
the low level of sodium indicate that there is much water contained in the body, also it does not indicate anything.
As for the feeding, your mother can eat what ever she likes. there is no contraindication for any kind of food.
