As you would be aware that the dietary restrictions are kind of strict, especially immediately after the surgery and these may last up to few months depending upon the recovery speed and differs from one individual to another. Because of such post-surgery restrictions, there are chances that the person may develop multiple nutrient deficiencies. Although, the doctors always prescribe the nutrient supplements, but the diet still remains to be major and most important.

Vegan diets are pro weight loss and are popular among many, but you need to be very careful with the composition of your meals after the surgery if you wish to take a vegan diet, as eliminating dairy and other animal foods may lead to a deficiency of Vit B12, and other vital nutrients especially vitamins and minerals. Therefore, I would suggest you to talk to your physician before starting a vegan diet and inquire about the best supplements to avoid deficiency. I would suggest you to get tested for mineral and vitamin status before stating a Vegan Diet.

The other, and major concern about following a vegan diet is sustainability, many people tend to turn towards the dairy and even non veg foods after some time, as the Vegan diets provides limited options. This may lead to undesirable weight gain laying extra burden on you, to lose the accumulated fat.

In my opinion, the best diet to follow after a bariatric surgery is one that has all major food groups and provides the nutrients in a balanced proportion.
Additionally, exercises are important to maintain the weight and keep you healthy.
