I Work Out. I Do Muay Thai (competition Level Intensity)

I work out. I do Muay Thai (competition level intensity) 3 times per week. I am coming up on a 15k on October 7th that I plan on running at a 735 pace per mile. I also do CrossFit 2 times per week. I eat Whole 30 (6 veggie based meals per day) I drink water, green tea, and black coffee ONLY. In fact, most of my money is spent on eating clean. My question. If you were to look at me you would never say I am a fit person just by the way I look. Guys come into the Muay Thai gym and can’t do 10 push-ups, or even last the entire class, they drink, smoke, and eat garbage and they look like GA models. What is wrong with my body? Why do I not show the signs of being fit? No abs. No muscle definition..nothing. It’s incredibly frustrating. My resting heart rate is 50 according to my Apple Watch so I can kind of see the internal fruits of my lifestyle, but why zero external? Is that all genetic?
