Have Loose Stools And Fever. HIV Positive. Had Eaten Catfish. Gastric Infection?

I have had loose stools and a low grade fever 98.9 to 100 on and off since yesterday. I'm 61 HIV positive but I saw my ID specialist on Tuesday and my CD4s are 720 and my Viral load is undetectable. I did have the shingles vaccine on Tuesday but did not seem to have any symptoms. I did eat some catfish on Wednesday and I'm wondering if I could have gotten some kind of gastric infection.

Since you were seen by your doctor only a few days ago and assessed as well it is less likely to be related to HIV.
It is possible that you have gastroenteritis which is commonly caused by a viral infection though bacteria can sometimes cause these infections.

The most important part of management of this condition is maintaining your fluids. You will be losing fluid via the diarrhoea and the skin ( as a result of the fever).
It is important to replace this fluid. Normally oral rehydration fluids are considered the better fluids to use because they have in the right amount of electrolytes to replace the ones lost in the stool.
