Best approach is to follow the gluten free diet for lifetime. As gluten in the diet will aggravate the celiac disease. Long term prognosis depends on how strictly you follow the gluten free diet. Bowel cancer risk is higher in patients with poor control in the long run. Hope I didn't scare you. Now a days it is getting easier to get gluten free stuff from markets but unfortunately it is still expensive. You could contact a dietician who can give you advice.
Is she being followed up by a gastroenterologist?
