Question: was at a restaurant and was eating soup then suddenly had difficulty swallowing. I then felt somewhat light headed and within 10 minutes developed the chills. I went to hospital and they said probable food allergy. They gave me epinephrine and benadryl and some meds but it's been a day and half later and my throat is still feeling frequently swollen which is making it difficult for me to eat.

Yes, possibility of acute allergic reaction is more likely.
And you have given appropriate treatment for this.
These kind of reactions need atleast 5-6 days for complete recovery.
So if your symptoms are improving (as compare to 1st day) then continue with these drugs.
Along with these drugs also do following things for better symptomatic relief.
1. Drink plenty of fluids orally.
2. Avoid hard to chew food. Avoid hot and spicy food.
3. Do steam inhalation and warm water gargles 5-6 times a day.
