Question: I'm a 30 year old male in great shape and have been waking up with welts on my face, neck, shoulder, behind my ears, head, hip.

I have gone through your complaints and you seem to be having urticaria. Kindly upload photos of the rash.

It has multiple causes ranging from infections, drug allergy, food allergy, parasitic infestations, thyroid disorders and in one third of individuals occurs without any cause.
I would recommend you to take antihistaminic like tablet Cetrizine 10 mg twice daily and apply soothing lotion like calamine lotion on the affected areas twice daily for 7-10 days.
If it doesn't improve in a week's time consult a doctor and get yourself evaluated.
