Brief Answer:

Mediators mean substances causing stress.

Detailed Answer:

Mediators are substances which cause stress.
Stress and anxiety related mediators are substances through which stress and anxiety cause their effects.

So whenever there is stress in the body, these substances (mediators) are produced. They act on target organs and produce symptoms.

Common mediators are cytokines and chemokines.
