Question: i have nerve damage due to nerve block treatment for stenosis etc and would like to travel but incontinence is an issue . what can I do to prevent both bladder and rectal problems as far as diet etc.

You should first know the foods that cause incontinence. Once you know them you should contain them during the week of travel.
Generally knowing is the foods that can cause diarrhea or gas worsen fecal incontinence include spicy foods, fatty and greasy foods, smoked meat, carbonated beverages, and dairy products. Beverages that contain Caffeine and alcohol also can act as laxatives, as can products such as sugar-free gum and diet soda, which contain artificial sweeteners.

Eat fibre rich food that form the bulk and do not cause incontinence.
Drink water so that the incontinence is contained within but it can increase urine continence so trade what is bothering you more.
