Hi and thank you fro asking!
I read carefully all your queries and stool report and I can say as follows:
1. calprotectin levele 71 ( more than 50 ) is indicative for IBD like ulcerative colitis.
2. You are not having diarrhea as I read your stools has been formed. This is a good sign . In cases like acute attack of ulcerative colitis usually diarrhea with blood is present.
I would like to know which is your current treatment for ulcerative colitis?
3. you are reporting to have gases all the days and your stomach stretches.
At the end, your findings till now are more suggestive of an acute gastritis /gastroenteritis.
Otherwise to my opinion if these symptoms continue more than 3 weeks than you should perform colonoscopy to evaluate large bowel mucosa and ulcerative colitis grade form.
If you have other concerns I would be glad to assist you further.

Detailed Answer:
Hi back,
If you have stomach swelling after any food than your symptoms are more related to :
- gastritis
- gallbladder issues( specifically after fatty foods).
I would suggest to start PPI's use like Prilosec and perform upper endoscopy plus abdominal ultrasound.
These symptoms are not typical for ulcerative colitis attack.
Hope it was helpful to you.
