Question: Is there a disease or disorder that mimics allergies? Other symptoms include low grade fever, itching (no rash), weight gain, fatigue, slightly elevated white count and hemoglobin. High sed rate.

I have gone carefully through your concern.
If the low grade fever and high ESR are persisting for more than 1 month and infectious disease are ruled out, before attributing them to allergic reactions I would suggest to rule out rheumatological pathologies.
Probably an internal disease specialist or a rheumatologist would be of help.
Hypothyroidism can not cause fever, high ESR and white blood cells.
