Brief Answer:
Increased sympathetic activity due stress and anxiety

Detailed Answer:
Hello,
Welcome and thanks for your query.
I understand your concern.
The racing heart of your wife in the absence of fever, anemia or heart disease is due to an increase of activity of the sympathetic nervous system. As a result excess of hormones like adrenaline and noradrenaline are discharged into the blood and leads to her symptoms.
Stress and anxiety are common causes for this.
If not checked, her Thyroid function also ought to be checked as Thyrotoxicosis can produce the same symptoms.
Diabetes does not produce racing of the heart. Diet rich in caffeine may.
