Question: I was wondering what my "stomach lumen pH" ought to be just before I eat. My doctor says that I have too much acid in my stomach.

The normal pH range for stomach acid is between 1.5 and 3.5

It is usually hypersecretion that causes he problems

It is also common after gall bladder removal

I had recommend this to you :

Avoid fried and fatty meals
Avoid Aerated Drinks
If used to alcohol and smoking avoid these

Take small frequent meals
And add a proton pump inhibitor twice a day

Antacid will help neutralize the existing acid but will not help reduce or control the hypersecretion

Is the "gastric lumen" the same as the "stomach lumen?" Would a pH of 2-3 just before I eat be considered normal?

Yes the gastric lumen and stomach lumen are one and the same

Apparently Normal in this range
