hi
I have read through your question and understood your concerns.
according to what you have mentioned your mom's symptoms are mainly linked to the deficiency in b12.

this is an important vitamin that is responsible for synthesis of red blood cells and nerve health.

a deficiency of this vitamin may result in improper red blood cell production, which is important for carrying oxygen in blood.

therefore she may be experiencing symptoms of being tired etc,

the inc in e.s.r may be asso. with the b12 deficiency, or if appropriate improvement is not seen with treatment then we can suspect any autoimmune disease that cause increase in e.s.r and b12 def.

acc. to what you have mentioned decreased cholesterol,glucose,b12 all seem to be pointing towards poor or improper intake of food.

b12 mainly found in egg, meat, fish etc

eat other green leafy vegetables that are rich in iron and folic acid

take a balanced diet with lots of fruits and vegetables

Do not take excessive antacids that may decrease the absorption of vit b12.

have a speedy recovery..!!
god bless
