Hello,
I feel sorry for your stress caused by taking constant care of your mother but the fact is that if your don't control your sugar levels,it may lead to various complications In future like cardiac, renal, diabetic retinopathy, neuropathy etc.
There is no reason why you can't control your sugar levels.
You may talk to your doctor for adjusting your dose of LANTUS as well as humalog.
Even addition of drug like VOGLIBOSE can be done.
Ask your doctor to give you some anti depressant and anti anxiety medicine.
As far as your fatty liver and high liver enzymes are concerned,it appears to be due o uncontrolled diabetes and may be due to deranged lipid profile.
I hope it helps.
Thanks
